Ranger Cookies
Ingredients
- 1 cup butter, room temperature
- 1 cup sugar
- 1 cup brown sugar
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1 cup corn flakes
- 1 cup rolled oats
- 1 cup semi-sweet chocolate chips
- 1/2 cup shredded coconut
- 3/4 cup chopped dates
- 1 cup chopped pecans
Directions
Heat the oven to 350° F. Butter a 9-inch by 13-inch baking pan.
Cream together the butter, sugar, and brown sugar. Stir in the eggs and vanilla. Stir in the flour, baking powder, baking soda, cinnamon, and salt, and mix until well combined. Stir in the corn flakes, oats, chocolate chips, coconut, dates, and pecans.
Spread the cookie dough evenly in the baking pan and bake for 25 minutes, or until edges are set and the dough is lightly browned. Allow to cool for 15 minutes before slicing.
